A siphon, also called a vacuum pot, has two glass chambers. Water in the lower chamber is heated until vapour pressure pushes it up into the upper chamber, where it mixes with the ground coffee. When the heat is removed, a vacuum pulls the brewed coffee down through a filter. It makes a clean, sweet cup, and the process is fun to watch.

Step by step

  1. 01

Fill the lower chamber with water and fit the upper chamber and filter.

  2. 02

Heat until the water rises into the top.

  3. 03

Add coffee and stir for 10 seconds, and steep for about 1 minute.

  4. 04

Remove the heat and stir again.

  5. 05

Wait for the coffee to draw down into the lower chamber and serve.

Taste: Clean, sweet and aromatic, with a medium body.
