A moka pot has three parts: a base for water, a funnel basket for coffee, and an upper chamber. As the water heats, steam pressure pushes it up through the coffee into the top. It makes a small amount of strong, rich coffee, though it has less pressure and no true crema compared with espresso. It was invented in Italy in 1933 and is cheap, tough and easy to use.

Step by step

  1. 01

Fill the base with hot water up to just below the valve.

  2. 02

Fill the basket with medium fine coffee, level and not pressed.

  3. 03

Screw the top on and place it on a low to medium heat.

  4. 04

Remove it as soon as it starts to sputter.

  5. 05

Cool the base under cold water and pour.

Taste: Strong, rich and full bodied, with a sweet, slightly bitter finish.

Questions

Can I use an induction cooker?

Only with an induction compatible moka pot, or on an induction adapter plate. Normal aluminium pots do not work on induction.

Should I tamp the coffee?

No. Level the coffee but do not press it, or the pressure can build too high.
