Cold brew is made by soaking coarse ground coffee in cold or room temperature water for many hours, then filtering it. Because the water is cold, the coffee gives up less acid and bitterness, so the drink is smooth and sweet. It is usually made as a concentrate and then diluted, and it keeps for about a week in the fridge. It can be drunk over ice, with milk or straight.
Step by step
- 01
Mix coarse coffee and cold water in a jar.
- 02
Stir to wet all the coffee.
- 03
Cover and leave in the fridge for 12 to 18 hours.
- 04
Strain through a sieve and then a paper filter.
- 05
Dilute 1 to 1 with water or milk and serve over ice.
Taste: Smooth and sweet, with low acidity and notes of chocolate and caramel.

Can I use any coffee for cold brew?
Yes, though medium to dark roasts with chocolate and caramel notes taste especially smooth.
Can I leave it out of the fridge?
A few hours is fine, but for 12 hours or more, keep it in the fridge to be safe.
